Nose : Very complex with multiple genres of aromas : citrus fruits, white fruits, butter...

 

Palate : Rich and complex with a amazing acidity/suppleness balance. Finesse and distinction, lots of unctuosity... Refreshing finish... Amazing vintage !

 

Serving temperature : Around 11-13°C

 

Ageing Potential : 3 to 10 years                     

 

Wine pairing : White meats like veal or poultry in a creamy sauce and obviously goat cheese. Its aromatic potency will pair amazingly with spicy and/or very perfumed exotic dishes like couscous or fish tajines, sweet and sour shrimp... Sushis will also match its minerality !
